If you need a break from cooking and are in the mood for something healthy, fresh and simple, look no further than this Fresh Berry Salad Recipe. The combination of strawberries and blueberries with the feta and tangy lemon dressing will make your taste buds happy and the addition of cooked farro will leave you feeling full.

Servings: 4


  • 3/4 cup farro cooked
  • 2 ounces strawberries stems removed, sliced 1/4"
  • 1 ounce blueberries
  • 1 ounce feta cheese crumbled
  • 1 ounce kale chopped
  • 1/2 ounce red onion trimmed, diced 1/4"
  • 1 1/4 tsp lemon juice
  • 1 1/4 tsp extra virgin olive oil
  • 1/4 tsp kosher salt


  • Combine all ingredients and toss.
  • Cover and keep chilled.
