Recipe of the Month: Turkey and 3-Bean Chili

Warm up this month with this healthy and easy one-pot Fall recipe for turkey and 3-bean chili. The perfect family dinner for cold nights when you just want something fast and simple to make. Satisfy your craving for warm comfort food with this healthy twist on a Fall favorite.

Serving Size: Serves 8

Ingredients:

  • 3⁄4 cup Picante sauce
  • 1 C Frozen corn
  • 1 C Beef broth
  • 30 oz Pinto bean (undrained)
  • 15 oz Kidney beans (undrained)
  • 15 oz Black beans (drained and rinsed)
  • 1-1/2 C Onion (chopped)
  • 1 lb Italian turkey sausage (casing removed)
  • 1 Green bell pepper (cut into 3⁄4-in pieces)
  • 1 Tbsp Canola oil
  • 1 dash Hot sauce

Directions:

  1. In a large saucepan or Dutch oven, heat the oil over medium-high heat. Break up the sausage and sauté with the onion until the sausage is browned and the onion is tender; drain fat. Add the remaining ingredients to the pan and bring to boiling.
  2. Reduce heat to low and simmer, uncovered, for 20 minutes, stirring occasionally. Serve immediately.
