Recipe of the Month: Herbed Orange Chicken

With Summer coming to an end and Fall approaching, we are all beginning to crave the comfort foods that come with the cooler temperatures. We have the perfect healthy dinner recipe that the whole family will enjoy. Try this recipe for Herbed Orange Chicken. All natural chicken breast marinated in orange juice, garlic, basil and thyme.

Serving Size: Serves 8

Ingredients:

  • 1/4 cup orange juice

  • 3 1/2 Tbsp extra virgin olive oil

  • 1/2 Tbsp minced garlic

  • 1 tsp ground black pepper

  • 1 tsp dried basil

  • 1 tsp dried thyme leaves

  • 1 1/2 lb boneless skinless chicken breasts

Instructions:

  1. Whisk the orange juice, oil, garlic, black pepper, basil and thyme in a large nonmetallic bowl until well blended.
  2. Add the chicken and turn to coat.
  3. Cover and chill for 2 hours or overnight, turning the chicken over twice during the chill time.
  4. Remove the chicken from the marinade and discard the marinade.
  5. Spray a sauté pan with cooking spray and heat over medium-high heat. Add the chicken and cook for 5 min. (to prevent sticking, make sure the pan is hot before adding the chicken). Turn the chicken over. Cook for another 2 min. or until the internal temperature of the chicken reaches 165°F.
  6. Let chicken cool. Cover and chill. Slice chicken and serve with the salad.
